  • ½ cup crumbled feta cheese
  • ½ cup red bell pepper finely chopped
  • ½ cup green bell pepper finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon ground cumin
  • 1 tablespoon lime juice
  • 1 tablespoons olive oil

To Serve

  • Fritos corn chips or Tortilla chips

Instructions
 

  • Drain and rinse the corn and black beans thoroughly under cold water. Let them sit in a strainer for a few minutes to remove excess moisture.
  • In a large mixing bowl, combine the corn, black beans, red and green bell peppers, and red onion, chopped cilantro and crumbled feta cheese.
  • Add red pepper flakes, and ground cumin. Drizzle the olive oil and squeeze in the lime juice. Add salt and black pepper to taste.
  • Gently mix everything until the dip is well combined. Taste and adjust seasoning if needed.
  • Let the dip sit in the refrigerator for 30 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature with Fritos corn chips, tortilla chips, pita wedges, or fresh veggie sticks.

Notes

1. Canned corn and black beans are quick and convenient. Just rinse well to remove excess salt and starch. But you can also use frozen (thawed) or fresh grilled corn for extra flavor.
2. If available, crumble a block of feta yourself for better texture than pre-crumbled feta. Feta is salty, so taste the dip before adding salt. You may not need much.
3. For a heartier version, mix in diced grilled chicken, shrimp, or even cooked quinoa to make it a light meal.
