Perfect as a Thanksgiving green bean side dish with smoky flair, it pairs beautifully with roasted turkey, baked ham, or other classic main dishes. Why You’ll Love This Garlic Roasted Green Beans Recipe

This healthy veggie side with hints of tangy lemon is super easy and delicious! It's the best side dish for turkey or any meal that needs a crispy, oven-roasted touch.

Quick and easy: It's ready in 30 minutes.

Toasty and crunchy: Olive oil keeps the green beans nice and crispy, while a sprinkle of almonds adds extra crunch.

Little clean-up: All you need is a large bowl for tossing and a baking sheet.

Great for any occasion: Ideal for your Thanksgiving dinner, potlucks, or weeknights.

Ingredients and Substitutions

This lemon-garlic green beans recipe needs only a few ingredients for a bold, crispy side! Scroll to the recipe card at the end of this post for the full recipe with ingredient amounts.

Garlic roasted green beans topped with toasted almonds and lemon slices on a baking sheet, served as a healthy holiday side dish.
  • Fresh green beans: Frozen green beans work, if thawed and patted dry first.
  • Olive oil: Creates crispy, golden edges. Extra-virgin olive oil or avocado oil are great choices.
  • Fresh garlic: Adds aroma and savoriness. Feel free to swap it for ½ teaspoon garlic powder.
  • Salt: I prefer ground sea salt or kosher salt. Avoid rock salt because the flavor doesn't distribute evenly.
  • Black pepper: Freshly ground black pepper is best for depth.
  • Smoked paprika: Infuses smoky warmth and subtle sweetness. Regular paprika is a good swap.
  • Crushed red pepper flakes: Skip for a milder dish, or use chili powder for a similar heat.
  • Lemon zest: Brightens up the dish. You can use lime zest as an alternative.
  • Fresh lemon juice: Adds tang. Balsamic vinegar or lime juice works too.
  • Sliced almonds: Offer a nutty crunch. Roughly chopped almonds are great for this as well.
  • Lemon slices: An optional vibrant garnish.

Variations

Eating your vegetables this holiday season will be a breeze with this easy green beans recipe! Keep them interesting at all your gatherings with these yummy twists:

  • Make them cheesy: Sprinkle with grated parmesan cheese, pecorino, or crumbled feta right after roasting for added savoriness.
  • Sweet and tangy: Drizzle the roasted green beans with ½-1 tablespoon balsamic reduction for extra sweet-and-tangy flair.
  • Swap the almonds: Use pine nuts, pecans, walnuts, cashews, hazelnuts, or macadamia nuts instead of almonds for a nuttier variation.
  • Herby green beans: Toss 1 teaspoon dried rosemary or thyme into the ingredients before roasting for some herby goodness. You can also sprinkle the roasted green beans with 1 tablespoon chopped fresh parsley.
  • Make it smokier: Cook 4-5 bacon strips until crispy. Chop them up and set them aside. Sprinkle over the green beans once out of the oven.

Storage and Reheating Tips

Prepping ahead or saving leftovers? Here’s how to keep these green bean recipes fresh and crispy for later!

Refrigerator

Refrigerate without almonds in an airtight container for up to 4 days. Sprinkle in the almonds right before serving to maintain crunch.

Freezer

Store in a freezer-safe bag or container for up to 2 months.  Thaw in the fridge overnight before reheating, noting they may be softer but still delicious.

Reheating

Warm in a 350f oven for 8–10 minutes to restore crispness, or microwave in 20-second increments. Add almonds after reheating.

Top Tips for Garlic Roasted Green Beans

These simple tricks will ensure your almond-garlic roasted green beans are perfect and effortless every single time!

Trim the ends: Use a sharp knife to trim off the ends of the green beans for uniform cooking and a tender bite. Sometimes the ends are tough to chew, so it's best to remove them.

Don’t overcrowd: The green beans should fit in a single layer on the baking sheet with some space between them to avoid steaming instead of roasting. Bake in batches if needed.

Keep the heat high: Don't roast the green beans below 400F. This temperature gives them a light char and crisp-tender texture, whereas a lower temperature results in soft, soggy veggies.

Toast the almonds: Add the sliced almonds to a dry skillet over medium heat for 2-3 minutes, stirring gently, to enhance their crunch and nutty aroma.

Hold the lemon: Toss with lemon juice and lemon zest after roasting to keep the flavors bright.

FAQs

Here’s what other home cooks are asking about this healthy holiday side!

Can I use frozen green beans?

Yes! Thaw and pat dry the green beans to avoid excess moisture, then roast as directed in the recipe card.

Can I make these ahead for Thanksgiving?

Absolutely! Roast the green beans a day ahead, store in an airtight container, and toss with lemon juice and almonds before serving.

How do I make them less spicy?

Skip the red pepper flakes or reduce to a pinch for a milder flavor.

Can I add cheese?

Yes! Sprinkle parmesan cheese, pecorino, or feta on top right after roasting for a cheesy twist.
