  1. Step 1: In a medium mixing bowl, combine the instant vanilla pudding mix and cold milk. Use a hand mixer on low speed to whisk the mixture until smooth and lump-free. Scrape down the sides of the bowl as needed to ensure all the pudding mix is fully blended.

  1. Step 2: Slowly pour the RumChata liqueur into the bowl while continuing to mix on low speed. Mix just until the liqueur is completely incorporated and the texture becomes slightly thicker. The pudding should be smooth, creamy, and lightly fragrant with RumChata’s cinnamon-vanilla aroma.

  • 1 full box 3.5 oz instant vanilla pudding mix
  • 1 cup cold milk
  • 1 cup RumChata liqueur
  • 8 oz whipped cream Cool Whip for folding into pudding

Toppings

  • 4 oz whipped cream
  • Ground nutmeg or Golden sugar crystals optional

Serving

  • 2 oz shot cups

Instructions
 

  • In a medium mixing bowl, use a hand mixer on low speed to whisk together the vanilla pudding mix and cold milk until smooth.
  • Gradually pour in the RumChata, mixing on low speed until fully incorporated. The mixture will thicken slightly.
  • Turn off the mixer and gently fold in 8 oz whipped cream with a spatula until the pudding becomes light, fluffy, and creamy.
  • Place 2 oz shot cups on a tray. Spoon or pipe the pudding mixture into each cup, filling about ¾ full.
  • Refrigerate for about 30 minutes, or until the pudding is set.
  • Pipe or spoon the remaining 4 oz whipped cream on top of each pudding shot. I prefer filling the whipped cream in a piping bag fitted with star nozzle tip.
  • Sprinkle your choice of topping, ground nutmeg, golden sugar crystals, or any decorative topping you like. You can use one topping for all the cups, or divide them (for example, half with nutmeg and half with golden sugar crystals) for variety.
  • Arrange the pudding shots on a tray and keep chilled until serving.

1. If you prefer a milder drink, reduce RumChata to ¼ cup and make up the rest with milk.
